ASIAN ROASTED CHICKEN & GREEN FREEKEH

Asian Roast served with Green Freekeh. Freekeh is a low carb, high fibre ancient young green wheat that is very popular nowadays. It is very easy to prepare, same as rice.

ASIAN ROASTED CHICKEN
1 plump whole chicken
Freshly ground black pepper
180 ml (3/4 k) soy sauce
125 ml (1/2 k) lime juice or rice vinegar
80—125 ml (1/3—1/2 c) honey
250 ml (1 c) strong Carmien Soothe / Green Rooibos, Aniseed & Fennel (4 bags)
6–8 cloves garlic, crushed
1 onion, sliced
GREEN FREEKEH
250 ml (1 c) freekeh
500 ml (2 c) boiling Carmien Green Rooibos (4 bags)
Salt
Big handful of chopped coriander and mint leaves
ASIAN ROASTED CHICKEN
1. Preheat the oven to 230°C
2. Season the chicken with black pepper and place in a roasting pan.
3. Mix together the soy sauce, lime juice or rice vinegar, honey and rooibos tea and pour over the chicken.
4. Sprinkle the garlic and onion on top.
5. Oven-roast for 15 minutes, then turn down the heat to 180°C and oven-roast for another hour until the chicken is cooked and nicely browned.
6. Spoon the sauce over the chicken from time to time while cooking.
7. TO SERVE Arrange the chicken on a serving platter, scatter coriander leaves and onion rings on top and serve with lime and green freekeh (see recipe)
GREEN FREEKEH
1. Cook the freekeh in the rooibos tea in the microwave oven for about 10—15 minutes until soft and most of the rooibos is absorbed. Stand for 5 minutes.
2. Mix in the herbs and serve with the chicken.
