LACE WAFFLES WITH ROMANCE ICE CREAM
Marble a syrup made with Carmien’s Floral berry through store-bought ice-cream and serve on lace waffles with lots of berries. So romantic!

VINTAGE ROMANCE SYRUP
250 ml (1 c) strong Carmien Floral Berry tea, use 60 ml
160 ml (2/3 c) sugar
Few drops pink food colouring (optional)
WAFFLES
2 eggs, whisked
30 ml (2 T) sugar
250 ml (1 c) Carmien cookies ‘n cream rooibos tea, using 80 ml (1/3 c) loose leaves
30 ml (2 T) oil
375 ml (11/2 c) cake flour
15 ml (1 T) baking powder
Pinch of salt
TO SERVE
1 litre ice-cream, with blueberries, if preferred
Fresh berries
SYRUP
1Place all the ingredients in a small saucepan, bring to the boil and cook till reduced by half and surypy. To test: spoon some of the suryp in a saucer and cool. If a sticky sauce forms, it’s done. Cool.
WAFFLES
1Mix together all the ingredients. Stand for half an hour. Pour into a squeeze bottle with a spout.
2Heat a pancake pan or non-stick pan till warm. Squeeze some batter in a lacy heart-form in the pan. Bake till small air bubbles form on top, about 1 min, turn and heat till done on other side as well. Repeat with rest of the batter.
TO SERVE
1Place a waffle on a plate, add a scoop or two of ice-cream, drizzle some vintage romance syrup over and finish with fresh berries. Top with another waffle if preferred.
